Macroalgae forests such as CYSTOSEIRA are crucial for an uncountable amount of marine species' habitat and unfortunately, they are in a dramatically dangerous situation too and definitely need our attention! This style of IPA felt like the perfect way to showcase our selected lots of Simcoe, a hop that played a huge role in the evolution of West Coast IPA. Big notes of pithy grapefruit and lemon zest, lots of fresh-cut grass, slight sweet pear and none of the cream-like character that a lot of Simcoe has these days. This batch feels like Simcoe and this beer will delight all fans of that hop.
